Committee secretary treasurer Carol-Ann Cummings said the rodeo ran out of beer by 8pm.
"We had to go and get an extra 30 cases of beer and spirits - the bars didn't close to 11.30pm," she said.
"It's the biggest rodeo we have ever had and was jam packed full of people - we had a downpour of rain about 3pm and it didn't stop people coming in.
"We changed the event three years ago to Easter Saturday and have not looked back.
"It just gets bigger and bigger every year."
Ms Cummings said 219 competitors showcased their skills in 37 events including steer wrestling, bull riding, saddle bronc, bareback, steer undecorating and team roping.
A rider suffered facial lacerations and injuries in the last event of the night and was taken to Dungog Hospital.
A separate bull in the same event was injured and had to be euthanised.
"The bull slipped in the mud and broke its back," Ms Cummings said.
"Unfortunately in this type of sport livestock and humans can get hurt, but it's never a nice thing to see.
"The committee and officials did not deem the ground unsafe at the time of the event."
