Preparations ramped up at Maitland Gaol on Thursday, with Hunter TAFE pastry chef Paul Miranda whipping up treats in a preview as to what’s to come next month.
Paul said that the appeal of chocolate and coffee were linked to their status as comfort foods.
“They're decadent things, coffee and chocolate. When you say to a friend ‘do you want a coffee?’ you’re really saying let’s sit down and have a chat,” he said.
“It’s an excuse to sit down and relax.”
More than 80 stalls are expected to be sprinkled throughout Maitland Riverside Carpark for the festival, with live demonstrations and music part of the attraction.
Paul said the live cooking brought an exciting twist to the weekend.
“What Aroma Fest brings that is exclusive is it’s dynamic, it’s real time, it’s happening in front of you.”
