The wet weather in the lead-up meant the game had to be moved from Largs to the synthetic wicket at Norm Chapman Oval.
Paterson went into the game as favourites, having beaten Fred Harvey Memorial back in round two and finishing the competition as minor premiers.
Paterson won the toss and sent Fred Harvey into bat first.
Fred Harvey got off to a good start, making 51 runs before the loss of their second wicket.
This was helped by a strong 64 by their number three batsman Brody Asquith.
But Paterson dug deep, and kept Fred Harvey to 5/139 from their 20 overs.
Steve Priestly was the best with the ball, taking 2-29 off four overs.
Mitch White and Jake Watson also picked up a wicket each.
In reply, Paterson chased down the target with four wickets in hand and just two extra balls to spare.
Jake Watson backed up his bowling performance with the bat to score 36no, while Grant Jackson and Shaun Presland made good starts to score 34 each.
Alan Faulkner, who usually captains Paterson, said the team went into the match with quiet confidence but had to work hard for the win.
He said it was a good all-round team effort that helped the team snatch the victory.
The grand final win will give Paterson a confidence boost going into the second half of the one day competition next year.
Paterson currently sit in fourth place on the ladder, but are not far behind the top three teams.
Dungog A-grade and C-grade teams along with Paterson A-grade and C-grade sides resume the one-day competition on Saturday, January 7.
In A-grade, Dungog will travel to Blackhill to take on Windsor Castle Stallions in the first game of 2017, while Paterson will play Raworth at Paterson Sports Ground.
In C-grade, Paterson will be away to Lochinvar in the opening round of competition next year while Dungog will come up against Fred Harvey Memorial at Gresford Oval.
